You can pull all that crap off and put the standard 2 BBL or change the manifold and put a 4BBL on it. There is some basic computer control for the venturie, you can lose that when you pull it off.
Assuming just doing the simplest and replacing the venturi carb: Specifically what 2BBL is the replacement, how much does it cost, and how do you "lose" the basic computer control for the venturi carb? The venturi carb is definitely what I've got on my Windsor 351.

BTW, my '91 starts instantly, runs smooth, and I've got no complaint with the carb at the moment. At 101,000 (CarFax verified) miles the entire experience of riding/driving this big "Vicky limo" with complete police package is better than any Lincoln Town Car, Continental, or GM/Caddy equivalent I've driven. It's unbelievably smooth and quiet, but corners and handles two-lane winding country roads or freeways at fairly high speed effortlessly without a hint of starting to fishtail or digging into corners - like it's "on rails" as they say. This is my first one and I love it. The local north county cab company which has some '02-'03 Crown Vics and Mercury Marquis and a couple of Lincoln Town Cars for airport shuttles offered to buy it for twice what I paid - on sight and just hearing it run.. NO way. I still want to put some better performance/sounding mufflers on; but I'm actually starting to like driving a car that's almost silent inside with the windows up. No traffic noise, just peace and quiet can be very nice, even for an old hot-rodder.

If it ain't broke don't fix it

If you are not having any trouble with the carb, don't touch it. I only suggest replacement if you are having problems with it or want to supe the engine up a little (4-bbl). You will find electrical connections going to the carb itself, and a few sensors, that runs to another control box. I don't remember how much is involved, but removal of it, will not effect the running of the car. There is a seperate simple electronic ignition module.
