That sensor you mean the IAVC I assume. I wouldnt bypass the coolant lines. Once the car warms up that's what makes you car idle lower. You can however take a resistor and bypass that sensor so your idle goes by the idle screw only.

i have a skunk2 manifold and i only have an idle air control valve. no coolant controlled idle for me.
