when you open your bottle, the nitrous line is filled with n2o but after a couple minutes of sitting a normal temps it turns into a liquid which cant be combusted so the purpose of purging is to get rid of the liquid nitrous in the lines and replace it with good gas n2o which will combust.

if you dont purge then when you hit the button for the first second the car will run really rich because theres no n2o being combusted so there only extra gas, but right away the lines will be clear and then the good gas will be in and youll get your boost in power
