94' Skylark 2.3L - Rebuilt Head and Now Overheats

I will try to make this breif and easy to read.

- 1994 Buick Skylark Custom, 2.3L QUAD OHC Engine, 150,000 miles
- 9 months ago it started running rough
- 4 months ago it wouldn't start (no compression)
- Turns out timing slipped and valves got bent
- Had head re-machined and replaced valves
- Put engine back together and filled with water
- Ran engine (IT WORKS)
- Drained water and replaced with coolant/water mix
- Engine will idle fine and the temp goes from 180-230 up and down while going slow
- When driving 45+ the engine temp goes to red line (280)
- If I shut off the engine there is a loud water hammer in the radiator
- When I pull the bleader hose that comes from the engine outlet lots of steam pours out but no coolant
- I let the steam come out and add more coolant until it is full and coolant comes out of the bleader hose
- The radiator is hot on the in side and cool on the out side and the heat works so I think the water pump is working.

I have blead the coolant several times but it keeps overheating. Is there another way to blead it? Could there be air stuck in the head? Is there something I am missing?
