Swapping 3.8 Impala Engine for ?????

My 2000 Impala has been a great family car but time has taken its toll on the motor. Yesterday I found that the oil and coolant have mixed. I am kicking around the idea of making this a project car. I would like to get some suggestions on possible engine swaps and transmission matches. Keep in mind I could care less about the electronics and a carberated 350 would suit me fine if that is feasable. Thanks for any suggestions

the impalla is a fwd car. Converting it to a rwd is a very huge project. I wouldn't advise it.

If you want to do something creative/interesting. I'd get the drive train out of a caddy, a northstar, although even that would be quite the challenge, getting all the engine management to work right
