Coolant warning light, help!

I have a 2003 Turbo S New Beetle that will soon have 60,000 miles on it. Recently, I had to replace the battery because something killed it - don't know what; it was the 2nd battery in the car, as one battery was replaced under warranty a couple of years ago. Last week when I started the car, the coolant warning light came on flashing red and beeping. I turned the car off and asked my husband to look at it, and went on to work in his truck. He couldn't get the light to come on, and he checked my coolant level (adequate) and checked the fuse (not blown). It has driven fine until today, almost a week later, and the same thing happened again. This time, I turned if off, waited a bit, and started the car again; the red warning light came on again. I waited a bit longer, started the car a third time, and the light didn't come on this time. I waited until the blue "engine cold" light went off before driving away. Can someone help me?

99% sure its your coolant temperature sensor, and its not covered under ry6 60k powertrain warranty. It IS covered under 5yr 50k bumper to bumper though. ITs a 23.00 part and you need a new o-ring for it. Located on the driver side of the engine on the coolant flange
