Do you think i should replace my head gasket before installing my engine?? My friend told me i need to resurface my head. I never heard of anyone sayin that u NEED to resurface your head?

Depends on the condition of the head, if it looks really smooth and uniform you should be ok, but it is always better to get it machined.

It's way easier to do out of the car, i've rebuilt motors both ways. Its so much easier to do on the ground...
