What do "engine numbers" mean?.....

When someone says an engine is a "302", a "340", and so on, what is this number referring to?

That number is the cid or cubic inch displacement. Standard measures volume with cubic inches. Metric measures volume with literes. If an engine is a 302, that engine displaces 302 cubic inches. The distance between the bottom most point of the piston travel to the top most point of travel is the displacement. 302 cid = 5.0 liters.

That's the stroke; the displacement is stroke multiplied by (pi*(cylinder bore)^2)/4, or in simpler terms, (stroke)*(bore area).
