1990 3.1 v6 would it be worth trying to convert it to a turbo'd car?? and if so what kind of engine work would be involved??

yeah, the best bet is to find the Turbo 3.1 from an 89-90 Turbo Grand Prix. you can sometimes find junk cars with the turbo motors on ebay, but they're hard to find.
if you go on w-body.com's forum, in the For Sale/Wanted section, i think someone is selling a 99% complete part set for converting a 3.1 to be turbo.
