Drive it around a bit, let it drop, mine does it occasionally when cold but always comes back!!

Your sending unit, the part that registers how much fuel is in the car, probably has a bad spot in the level sensor side of it or its getting stuck in that position. You might want to have it replaced so you don't have to keep worrying about your fuel level.

Had an '89 E30 and it did the same thing for 174,000 miles. Only time it ususally appeared was filling after the low fuel light came on. Usually after 50 miles or so and after a good bump in the road, the sending unit would release and show the correct level. Never did figure out how BMW designed that flaw. Must be a design oops since so many seem to have the problem.
