83 chevy 3/4

me and my dad are planning on kind of restoring an 83 chevy 4x4 3/4 ton longbed. it has a 350 in it right now but we are planning on building a 383 stroker to put into it then the normal paint and fix dents. does anyone have an idea for it?

what will this vehicles purpose be ?

this would be a good truck for a business use. take trash to the dump etc.

I would guess about 12 MPG with this set up. expensive to operate but good for work vehicle.
