I don't know much about third gens, so I can't really help you with your motor mounts question.
As for your cats, if you get rid of them, you'll have more hp. I don't think it would be that significant, but anything you can do to smooth the flow of exhaust has to help overall.
The reason you're having flames come out of your tailpipes might be that you're running rich. It means that you're having excess fuel come out of the engine, fuel that wasn't detonated in the cylinders, and it's igniting in your exhaust. Lean out your f/a mixture and see if that helps.
