The alarm should shut off when you start the car, unlock drivers door with the key, or lock/unlock with the keyless entry remote.
Check your door sensors. My 98 Avenger ES V6 would lock the doors on me because the door sensors would not register that the door had been opened once unlock. The security system automatically relocks the door if it doesnt register it being opened after 60 seconds I think. As for the hood thing sometimes there are hood sensors that are wired into the system as well. I guess to prevent people from stealing your engine. If it is not these then it could be a shorted wire or something. Next step would be to have a dealer diagnose the problem or maybe they could reset the security system and reprogram it for you.
