Angry Radiator fan not working

94 Grand Am GT 3100. Radiator fan comes on when a/c on, but will not come on by itself when gets hot. Replaced temp sensor (the one with the 2 wires front right), still wont come on. If I disconnect the temp sensor, the fan comes on and stays on all the time. My understanding is that the temp sensor talks to computer and computer turns on the fan. Is this the only function of the temp sensor? If so, what harm is there in leaving it disconnected as that leaves the fan on all the time.
Thanks for help in advance.

what is getting hot?

According to information from ALLDataDiy for my car, my car's fan does not come untill the temp is 212 or greater. My car hardly ever gets that hot, so the fan never usually kicks on. You can use a Scanner to turn on the fan on newer cars. Look it up in a manual to see what temp your fan is supposed to come on. If the temp never makes it to that temp their is no problem with cooling system
