Overheating?

I recently changed my radiator(again), thermostat, and thermostat housing. right now im using water instead of coolant. i dont know if that is causing it or not. since i had everything replaced my car no longer over heats. somes times it will over heat a little but not as bad as it used. when it does, it sticks for a few seconds than shoots down kinda quick. what could cause this? or is it even something to worry about. how could i possibly fix this? thanx in advance

Running a vehicle without the coolant (without rust inhibitor) is not a good choice. Besides other things water isn't as efficient as the coolant. A major cause of radiator failure is the use of city tap water that includes the mineral deposits that in time stick to the insides of your radiator core. (use distilled water) It sounds like you have eliminated that the thermostat is the problem but you may have overheated your engine in the past causing damage to the head gasket.
