I'm assuming the first "don't" should be a "you." You do save horsepower, and that is because when the A/C is connected, the belt is always spinning, and it's spinning the compressor. Energy from your engine has to be used to move those, and what goes into moving your A/C components does not go to the ground. Thus, when you remove it, you reclaim the force that was being used to power the A/C.
