The best method of control and safety on electrical components is via the cooling fan relays. There are a total of 3 but you should use a GM wiring diagram to properly connect the wiring.

Anyone have the instruction sheet on the ZZP kit? I wonder if the kit taps into the relays at the main fuse box.

Note: Although it may look like the cooling fans run all the time they probably don't once you get going with proper airflow to the radiator/engine and the fans are inhibited for turn on at speeds around 40 mph and up.
