For interior pieces, i.e back of the seat, I'd use the Kevlar Basket Weave Yellow/Black (Code 1300) or the Carbon Kevlar Plain Weave Black/Amber (Code 1200). But other pieces should also be ok with the Twill Weave Black/Pewter.
Your best bet would be looking for reference pictures and match that. If there is no pic, refer to Tamiya's instruction guide (usually X-18 refers to Twill Weave Black/Pewter) this is especially true in newer race cars.
SMS Hi-Def CF is great for exterior use, I think it is too dark for interior use though.

I noticed a lot of you guys use the kevlar yellow/black for the seats, but i did find a few cockpit photos of the nsx. the center part of the steering wheel is raw carbon fiber, flat finish and everything else inside is black. I'm not too worried about making it super accurate, just nice and clean looking.

EDIT: also, how much will I need? How much does one sheet cover?
