98 Cavalier replacing clutch?

I have a 98 cavalier and the clutch is just now strating to slip or chatter a bit. It has about 122K miles on it or more and I have never had to replace the clutch. Right now it is parked on the side of my driveway because I have another car to use for now.
I have done lots of repair work on several different cars and pickups, this will be my first clutch. Aside from paying $750.00 for some one to do this for me, is this something I can do. Yes I have a book on the car and it does seem to be a lengthy process. With the car being so old I am not sure if I should just replace the plate or go for the clutch kit at Advanced Auto or Napa for $300.00. My worry is getting it all apart and not being able to get it back together. Plus this thing has a strange throw out bearing like thing I have not seen before, something Hydraulic. I have a fair amount of tools and I am unsure if there are any SPEACIAL tools for this project.
I am not an idiot but I am not as good a a paid mechanic.
Any suggest would be great!
