I don't really do any internal engine work, but here's what I remember from school.
Dish pistons are sortta dish shaped... they have a lip around the outside that is higher than the rest.
Low compression pistons just have lower compression than stock. Adding on forced aspiration could require the use of lower compression pistons if the engine has high compression already. I don't know of anything else they would be used for.
Dish pistons could also be low compression pistons.
