Have you checked the spark plugs and plug wires? Also, are you sure you replaced the coolant temp sensor and not the sender? There are two, they look similar, are near one another, but only the sensor will actually help with what sounds like a flooding condition for you.
When you are trying to start the truck, I assume you crank the engine for a short time, then hold the throttle all the way open. With the throttle all the way open, it should go into "Clear Flood" mode and shut off the fuel supply to the cylinders. If you are holding the throttle all the way open from the first attempt to start and it's starting, that would imply that the "Clear Flood" isn't happening and you may have a Throttle Position Sensor (TPS) problem.
