I did a '67 fastback into a clone back in 1975. I used a wrecked SS for all the parts that I needed, which had a complete interior in good shape. The ragtop SS may have had some differences, so do your research on what model came with what options.
Aftermarket parts will be pricey and you'll have to find everything for it to be accurate. I'm sure that you can get anything that you need.
