There are sensors that monitor the engine temperature but I doubt any would cause the engine to stop. That would leave GM open to huge liability suits if an accident were to occur.
Top 3 causes of intermitant stalling are ICM, fuel pump & crank sensor. Next time it stalls you need to be prepared to check for spark & or fuel pressure.
