I got the ticket around noon time, and got insurance a few hours before. I was in a hurry to a so-cal ride so I didn't get the insurance papers that were faxed to a friends house cause I didn't think I'd get pulled over.
So I had to plea not guilty, but is the judge allowed to do that based on his belief when all the facts say it was legit?

What facts? You showed him a slip of paper, dated the same day as the ticket? hardly a fact at all.
If you want to beat it, you should talk to the insurance company, getting a letter, explaining the time your insurance was active.
