Good choice on your purchase!

I used to have a 2000 like yours (now have a 2003) and noticed these things:

1. Throttle body service is needed about every 20k miles or so. You may notice it trying to stall while in gear and stopped. Figure $100 if a dealer does it.

2. Intermediate steering shaft will probably need to be lubed if you start getting a knocking feeling in the steering when turning. Again, a $100 service at a dealer but the lube kit is only $10 and you could do it yourself in about an hour. The lube "fix" lasts maybe 15k miles though I understand a replacement shaft is now offered by GM.

3. Rear A/C condensate drain - make sure you see a small puddle of water by the tailpipe or that line may be clogged and back up into the cargo area. It's no big deal to unclog, but that's just some advice from personal experience.

Neither of mine had the peeling paint, seems kind of a strange location for that to occur. I haven't heard of the leaking intake gasket on the 5.3s that were so common with the 350s. Guess they fixed that.
