Don't use 16ga for patches on body panels, its way too thick. It would be really difficult to form or shape to fit correctly. Not to mention the difficulty of welding 16ga to 24ga or even thinner.
Try to find a dealer who does metal specifically and not all sorts of hardware. Aluminum killed (AK) or silicon killed (SK) steel is easier to work but very difficult to find in some areas. My personal preference is 20-22ga 1020, its pretty much a universal "easy" fit when it comes to body panels.
Also keep in mind that the newer a car is the thinner its sheet metal is likely to be, possibly as thin as 30ga; imports tend to have very thin metal as well.
