It should be running in the 200 to 220 range not much higher. Make sure that the fans are turning on and I would check the oil for water. If the low coolant light is on it sounds like there may be an issue with the manifold gaskets again especially if you keep losing coolant and there are no visible signs. You may also want to flush the radiator and make sure you have good airflow through it. A new thermostat may not hurt either.
