I've typed the procedure so many times here it isn't even funny.
You have to let it warm up, then shut it off, wait a few minutes then open the t-stat bleeder and the cap and refill.
If there's air trapped behind the thermostat, it's being forced against it by water pump pressure. The stat can't sense the water temp, because there's no water there. So it stays shut and the engine begins to overheat.
Are you sure the bleeder isn't clogged or something? Do you see bubbles or nothing at all?
You might wanna try filling it with the whole bleeder fitting out, allowing it to purge more freely.
Other than that, you might have a wonky temp sensor.
