well it HAS been proven that the stock GM products like the plugs, wires, coils, etc... are the best option that you have for the car. many companies have tested this and when they make there high HP cars, they still use the stock coil packs and stock wires. they have been proven to have less % of failures compared to any aftermarket parts. they have a awesome temp rating and almost 0 failure rate. even the coils, some people think they shuld get MSD, but no one does really, the stock coils are better then the MSD coils. same goes for the plug wires, more people have had problems when they change to aftermarket then before they did.
so there is no reason to not use them.
oh, and there is no interval for changing the fuel filter, just to change it when you suspect its plugged. 60,000 doesnt sound too high for me, its a $6 part and an easy job, I changed mine at like 35,000.
and for the PCV valve, the interval is 30,000, its ilke a $3 part and a 5 min fix.
Air filter - it depends on what you want, just a replacement one, or a K&N replcement one, the K&N will help air flow better and you'll get a little more power...very little, but still something. and while your doing that you might want to gut the air box while your at it, then you will be an increase in power, plus a nice throaty sound from your exhaust.
for oil filter I use mobil, otherwise fram SUCKS. fram anything sucks, in autoshop class they cut apart a fram oil filter and it was basically carboard inside, that was what it used to filter the oil. so if you feel comfortable with using carboard to filter you oil, go ahead. but I would stick iwth either mobil or bosch, or the AC delco. I personally have never used STP products but there not bad. they are better than fram and not as good as mobil.
