1) Take pictures and show them when you go to court. Advise the judge that you did not see the sign, but would have stopped if it had been visible.
2) If you're not sure of how fast you were going, then you might have been speeding. Aside from the usual advice(pay attention to your speed) you should usually try to have things reduced, so going to court and pleading not guilty is a good start. There are numerous threads here about speeding tickets, check them out for advice.
Incident) Sounds like the police are keeping their eye on you. Small town? Do you have a history of tangling with the police? Your car looks fast, and that may be enough to get their attention. I'd say it's best to watch your a** for awhile, make sure you are following the law. Don't give them a reason to follow you or pull you over. Eventually they'll quit watching you. (and...it might have been the same cop that gave you the speeding ticket, "keeping an eye on you" during this incident.)
