It may depend on the tranny you're using and the slope of the land or weight of your vehicle, hp, etc. I think second would be a good choice for any tranny with a decent engine making adequate power to scoot along with smooth throttle response. A short shifter might help the problem with shifting faster. You don't want oversteer in third trying to maneuver a corner because you'll just slide out and fuck up. Second at high rpm can get twitchy though and drift.
