just a guess:
since it is quite humid in Florida, and you DID bust a rad hose.
odds are the DEX-COOL/glycol got on the belt.
and it is probably still on there.
when the A/C clutch engages, and grabs hold, if the belt is old/fatigued, and/or covered with a slippery substance, slippage could result, which would cause idle fluctuation, slight belt deflection, and minor vibration.
only does it with A/C on? how many miles? compressor could also be going. you said the truck overheated? for how long, and how hot? could be plugs.

I'd check the belt first though, if you say this immediately ocurred after the busted hose, and never before.
