You have gone one step further than I have, you actually bought the Console. I have the Diamler Chrysler Factory shop manual for the 2001 RS body type (All Chrysler Minivans) on CD, and I have the "Body Diagnostics" manual in paper. I am used to Honda Factory manuals, which are much more readable.
I see several issues that need to be looked into:
1) The OH Console is bigger than the lights only OH console. Some cutting of the headliner may be needed, to get it to fit. That means there might be no "going back" if the console doesn't work out.
2) The manuals I have indicate that the tempreture sensor is connected to a computer module in the engine compartment, and is read over the "PCI Bus" that connects all of the many computers these vans have. It is a serial bus (one or two wires), but I don't know more than that.
In order for the larger OH Console to be of any use other than sunglass storage, a connection to this bus is required. For ~$40 delivered on ebay, that is a pretty expensive sunglass holder.
I don't know what this bus looks like, and if a connection to this bus exists where the OH console would be located.
