Andy Matthews produces some amazing 1:12 F1 cars (I saw his Lotus 49 a few years ago, and it was amazing). He's started to produce books showing detailed photographs of the real cars and his models to help fellow builders.
Also worth looking for is Akihiro Kamimura who works under the banner of God Dwells in Small Things. He's a Japanese builder of mostly highly detailed 1:43 models, and has been an inspiration to me for a while. If you google his name you'll find quite a lot of stuff, but my current favourite is his awesome take on Tamiya's 1:20 Ferrari F2001.
