For the coolant bleed: Fill your radiator and your coolant reservoir. open the bleed screws and let the car reach operating temp. when your bleed screws shoot a solid stream of coolant (not bubbling), the air should be out of the system. your bleed screws should be: one near the thermostat housing and one in the heater line leading to the heater core.

the starter thing sounds like when I swapped a 350 into my Toronado. I know you said you already dismantled the starter, but examine the drive gear pinion. Mine did the same thing and it turns out that I had missed a few shims on my starter housing, and upon examining the starter I found a small groove worn into the shaft that was actually keeping the starter teeth engaged in the flywheel and it was also keeping the solenoid energized, I had to unhook the battery to make the starter stop spinning.
