Try again with them pics man.
From the sounds of it, yer testing your ECT. It jumping all around is what is does when it is bad. If your car heats up while sitting in traffic and cools down while moving, and the gauge shows this, then your ECT is fine.
If your fan comes on when you wire it directly, then you more than likely just need to replace the relay.
