double clutching is required only in cars with no syncros. All modern cars have syncros therefore it will not be required to double clutch unless the gearbox is bad in which case you don't race.

also there is no such thing as "granny shifting" unless you use in a derogatory maner with the clear intent of insulting someone else's shifting skills.
