On that age of Crown Vic any mechanic shop can do the jop for you. If it's just leaking, i'd suggest just tightening the bolts on the pan unless you really want to have it replaced.
Something else that could be causing the leak is the valve cover gaskets may be shot. Look for oil residue on the sides of the engine block to see if this is the problem.
The other problem would be the oil seals are fried in which case u definitely need the engine pulled. This is a tell-tale sign if you find you haveing to add oil to the car. Doesn't mean your car is burning oil, it just means that the sucker is leaking like a siv.
I don't have any thoughts on what to do with the motor out of the car... maybe just have the tech (or yourself, whoever is doing it) have a look and see if there's anything they recommend.
