There still seems to be something missing to this story but I will attempt to give you a partial answer.
Stripping the interior out of a 2002 S10 extended would not be as time consuming as say a Blazer. Removing the seats and console as well as the kick panels, bottom door sills and the pieces in the extended portion and then pulling the carpet up shouldn't require more than an hour. Removing both door panels shouldn't be time consuming either, we'll give another hour. To have the seats (assuming there cloth) cleaned and the time required to dry, installing premolded carpet and assembling the doors maybe 3 to 3 1/2 hours. All total it wouldn't require more than a day to disassemble and clean the interior and reinstall new carpet and clean. This would not include disassembly of the dash, if that was to be completely disassembled and cleaned, better add another day. That would give you at most, 16 hours tops at a rate of $65/hour, the labor would be $1,390.
