You want to use OEM throw out bearing (plastic inner sleeve, not metal), and mos tpoeple prefer BG Synchroshift for fluid. Its about an 8 hour job on a virgin DSM, when you know how it all works. Plan for a full day if its your first one. Nothing about it is terribly hard though. Make absolutely certain the flywheel step height is cut to .610, some shops will just think you dont know what you are talking about since they dont usually get requests for step height (they just machine the mounting pads the same amount they cut the firction surface). Make them verify it for you before you pay. I would recomend the 2600 over the 2100, almost everyone that runs the 2100 upgrades after a short time. If this is a stock car is will just be a A-B type car, then sure a 2100 or stock clutch will work. I usualy get my ACT clutch parts from sowboyracing.
