Oily water coming out of your exhaust is perfectly fine. I thought it was strange at first but my neighbours van is like a water hose that spurts out water 1 meter from the muffler on startup :S. There's nothing wrong with that because it's a 2003 (practically new at the time). It's just condensation but you obviously knew that. The oily part is most likely due to the residue found in the piping.
I heard someone say that a new headgasket takes time to settle in an engine because oil residue fills in the spots and acts as a complete seal. Try runing it a few times and see what happens.
