high temp. thermostat vs. low temp. thermostat

I have a 1989 Cutlass Calais 2.5 that has been overheating. We flushed / filled the collant, replaced radiator cap, replaced thermostat. There are no leaks...just when it gets hot, water comes out the overflow. Even after all this, it still overheated. The light came on and I immediately turned AC off and the light immediately went off. I also just learned that the new thermostat is a 160 degree. For my car, there is a 195 degree, 180 degree, and 160 degree. Do I need a higher temp. thermostat? I live in Texas and it gets HOT here...I'm not sure if that's a factor when choosing a thermostat. Thank you in advance.
