Not sure about the 6.0L swap...but I DO know that a 4.8L or a 5.3L will swap, as I did this to my truck. Like you said, the V6 just wasn't cuttin it anymore. The process is quite a hassel and if you aren't an experienced mechanic I wouldn't recommend doing it cause it a big pain in the butt. Anyway, I got a list of what it took to complete the swap. If you are still interested in doing a swap, go ahead and email me.
As for a Chevy dealership doing it, fat chance. They'd probably try to sell you a brand new truck with a V8.
