I had the EXACT problem in a Corsica 3.1L I owned last year. It would do fine on the highway, but once it got in the city it sputtered and died at every stop light, and would not start for at least twenty minutes. The engine seemed quite hot although it wasn't spewing coolant everywhere.
It turned out that I needed to replace the thermostat. After that, it worked fine. I would say that would be your problem. Look into getting a shop manual for your truck too. It will help you find where your other temp sensor is.
