I have been in far too many races to pick my best, so I'll just pick one off the top of my head.
A really good one was not long before my 89 GTC was totaled. I was driving through American Fork headed for the freeway. The light I was at makes a good left turn on to State Street. Up next to me pulls a blue WRX. He kept inching up as he expected the light to change. I stood still bringing up my RPMs for the launch. As I did I heard his engine begin to rev as well. The light turned green and we both dumped the clutch. I got a damn good launch, but his AWD made quick work of that. Lucky for me I was on the inside, taking a little edge off his advantage. Once I hit second gear I began to pull on him. I passed him in fourth and we both shut it down. At the next light we were both taking a right on 500 East to get on the freeway. We come around the turn and he tried to get around me and he pulls past me. Too bad for him this race turns out just like the last. Now for the best part, we get to the on-ramp and both take off towards the freeway. As I begin to pull I start to pace his speed. When we merged onto the freeway I let him catch up and I paced him, then I looked over, waved goodbye, and then I floored it and just walked away. I shut it down about 130 MPH. He caught up and had a bewildered look on his face but we gave each other the thumbs up, and that is what made that race great.
