hydro/cable is just the way the clutch is operated, in a car with a cable clutch, a cable is hooked on the throw out arem and the pedal and the pedal pulls the throw out arm, and in a hydraulic clutch the pedal pushes fluid through thje libne and pushes on tyhe throw out arm disengagig the clutch. which one is better depends on what car you got, and what gearing you prefer.
