PS, we make maple syrup in New Brunswick, Canada too. I went to a "factory", it was really just a little shack in the woods with some equipment, and the owners house near by. You insert a tap into the tree, and a bucket collects the sap or whatever it is, then they put it through all the equipment. Some gets made into syrup, but they have a big wheelbarrow almost that they fill with clean snow, then pour some boiling syrup into. Once it cool, you can eat it....toffee

It's best when still a little warm because then it's still kinda watery and runny, instead of the hard/chewy stuff you buy in the store. Yum! I could have eaten that whole batch of the stuff....
