It could be a number if things, most probably though is that your piping is small and there already is turbulent flow. Note that the sensor will still read, it just won't read correctly.

Try it on something like a RB/JZ with 80mm inlet piping and huge airflow, so any difference is magnified, and you will see tragic results.

Basically, the factory puts things there for a reason, and they've done a lot of R&D to get those results. They wouldn't spend money (and throw away airflow) without very good reasoning.
