how do you replace the factory shift knob with a different one

Probably with autocad and a dial calipers...to reverse-engineer what you have.
Then you can develop a new design to include the same functionality and "adapt" it to what's already there in the vehicle.
In all seriousness, I have no idea...are there even aftermarket shifters which are "bolt-on"?

yea...but i was needing to know how to get the factory knob off

It would help to post the year Grand Prix.
For '97-'03:
At the front of the shift knob (dash side) is a u shaped clip. You will feel the indentation. Move the shifter down to D1. Use a small flat blade screwdriver and pry the clip out and then the knob will remove.
