Besides the nose plugs, whats needed to change out the differential oil? and where is the fill and drain plugs located? i never really took a close look at the case yet

There's no drain plug; you will need to remove the rear inspection cover in order to drain the oil. Not sure how much a 7.5" holds, but an 8.5" will take two quarts of oil. I use the heavier stuff, but then I also live in a warm climate.

the fill plug is located on the passenger side of the diff...remove the rear cover and do not force off [bend].......then clean cover with paint thinner and apply gasket to cover with sealant..
using a cloth clean out the gear box/magnet...use paint thinner to remove the goop if necessary...
install the cover with even torque to all bolts...torque to about 10-15 ft lbs . fill diff to just below the fill hole with 80-90wt gear oil...
I do not apply sealant to the diff face...this aids in removal in the future....also less chance of sealant getting into the diff..
if the diff face is damged/rusted then applying sealant to the diff cover gasket surface on the diff side may be necessary..before assy..
